The Kerala houseboat industry exists to give you a specific experience: a fixed route, a printed menu, a sunset on the main channel with fifteen other boats visible from the deck. It is pleasant. It is also a managed simulation of what the backwaters actually are.
A kettuvallam is a converted rice barge — the vessel that worked these canals for centuries before tourism arrived. Your captain has been on this water his entire life. He knows which narrow side canals lead away from the main channel into a different Kerala entirely: women washing clothes on stone steps, toddy tappers working the coconut palms, fishing nets that have been in the same family for four generations. The water narrows until the palms touch overhead. The noise of the main channel disappears completely.
Lunch is cooked on board that morning from whatever was at the market. Kerala cooking at this level — fresh coconut, river fish, curry leaves from the garden — is one of the best things you will eat in India.
